Tres Leches Cake

Now this is a first!

For Americans/Canadians, this is probably a very common cake, but for us down-under, it’s very rare!

I for one have never heard of it, never seen it at restaurants or cafes, and no one I know has heard of this cake.

This was my first order through Neighbourly website, and they were game to try this cake they’ve heard so much about (I’m guessing they didn’t hear about it in NZ!)

For those like me who’s never heard of it, it means 3 milks cake, and the 3 milks consist of cream, evaporated milk and condensed milk.

The cake is drizzled and infused with the 3 milk and iced with chantilly, sounds indulgent or sinful? You decide πŸ™‚

As strawberries were commonly used to decorate this cake, I’ve added them to the layers as well as used as topping – apparently the cake was a hit!

Basic Carrot Cake

This year for Brooke’s 5th birthday cake, they decided to try something new – carrot cake. I must say this is the first time I’ve gotten an order for a carrot cake for a child – it’s usually an adult cake. They ordered a 10″ one with the traditional cream cheese buttercream to top, and just needed a message and basic decoration.

Thomas the Tank Engine chocolate cake

Thomas the Tank Engine seems to be making a come-back, 2 orders for him in the span of a month!

This was an order through Trademe, Denise wanted a 7″ chocolate cake, and requested to have a specific version of Thomas on the cake.

Unlike the previous few, this was a dense and moist chocolate cake and not a chiffon cake, so it was topped with buttercream.

Thomas the Tank Engine + Peppa Pig half-half chiffon cake

Aarya’s second order for her 3rd birthday was to be shared at childcare centre with her classmate Sacha who was also celebrating his 3rd birthday.

He wanted Thomas the Tank Engine, she wanted Peppa Pig, so why not do a half-and-half!

Sacha wanted the front-on look of Thomas, while Aarya went for the fairy version of Peppa Pig, and this huge 12-inch chocolate chiffon cake was born! I tried to fit them both on without looking too small, which was almost a squeeze for the divider, but all worked in the end, phew!

Peppa Pig chiffon cake #2

Lucky Aarya, her mother asked for 2 cakes for her birthday, one small 7″ chiffon cake for the family gathering and a big one (which she went half-half with her classmate) to share with the class later in the week.

They sent me a picture of another cake where she liked the balloon idea, and also wanted a slightly different version to my previous one where Peppa was having fun walking in the mud, so I thought this would be a cute one to make.

I went with a grass-green background for the outdoorsy style, and she wanted a chocolate chiffon cake this time.

This cake was made in February 2016, I am catching up I promise!

Pocoyo vanilla chiffon cake

Here’s the 2nd cake for Tony, his younger son Nolan’s birthday. He ordered a vanilla chiffon cake (I checked again this time to make sure it’s not chocolate!) pretty much everything’s the same except for the picture on top – 7-inch, whipped cream filling, but he’d liked less food colouring – I see that my attempt to make the navy blue wasn’t really necessary after all!

I like this one light actually, especially with the yellow background, really makes the blue character POP!

I’m so out of it, it’s only after they’ve picked up the cake that I looked up this character – apparently he’s called Pocoyo, some kids TV show thingy?

Yes, in case you’re wondering why it looks bigger than that previous 7″ cake, it’s dos I made it 8″ this time to make up for that chocolate cake mistake. I’m surprised how 1 inch makes such a big difference, it doesn’t look as crowded anymore! Either that or I was too ambitious with the size of the rocket on that previous cake, who knows? πŸ™‚

Nolan’s classmates are in for a treat – Tony’s also ordered 40 mini cupcakes to share with his childcare centre on Tuesday!

 


Rocket chiffon cake

Tony, who’s ordered birthday cakes for his sons since I could remember, ordered 2 cakes this time, one for each son whose birthdays were just a few days apart.

He must have lots of faith in me (lol), ordered a cake 2 days before he needed it, on a Monday night! Haha, gave me a bit of a freight, but how could I turn him down, rushed to the supermarket during my lunch break at work on Tuesday, and after teaching got straight to baking the cake at 7pm. I was pretty proud that I managed to finish the cake just before midnight!

I made a 7″ vanilla chiffon cake with the rocket picture Tony had provided, filled with whipped cream. The picture of the rocket had a navy blue background, and since that was hard to make, I went with the darkest blue I could produce.

After finishing the cake, I went online to check the email Tony sent me, and there it was – 7″ chocolate chiffon cake with whipped cream – right in front of me. CHOCOLATE! How did I miss that? Well there’s no going back, he’s picking up the cake the next day at 4:30pm, I immediately emailed him and apologised for the oversight. I offered to salvage it by sprinkling chocolate on it, and thankfully he was nice about it and was happy with the chocolate sprinkle, hence the chocolate shavings you see at the bottom of the cake – I know, it was a lame save but better than nothing!

At least they said they all enjoyed it πŸ™‚

BTW this photo wasn’t the best I’ve taken, I literally got home at 4:25pm, took out the cake, sprinkled the chocolate around the cake, got the camera, by the time I set up the cake to take a photo, Tony’s car pulled up – I took about 3 snaps and hoped the photos came out ok – this was the best one, lol!
